CUPCAKES

For this recipe you will need a 12 hole
muffin pan, lined with paper cases
Makes 12
1 stick chilled butter
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 ½ cups self-rising flour
½ cup milk
1. Pre-heat the oven to 375 ˚F
2. Cube the chilled butter and place into a
large mixing bowl with the sugar.
3. Press the HeatSoft™ button and mix
using speed 1 initially, increasing to
speed 5 for approx. 2 minutes until
softened and creamy.
4. Turn off HeatSoft™ Function.
5. Add the eggs 1 at a time, mixing well
between additions on speed 5. Gently
mix in the vanilla.
6. Add the flour and milk and using speed
1, gently mix together until smooth.
7. Spoon the mixture carefully into the
paper cases, filling ¾ full.
8. Bake in the center of your pre-heated
oven for approx. 20-22 minutes until
risen and golden.
9. Place onto a wire cooling rack until
cold.

VANILLA CREAM CHEESE
FROSTING
Prep time 5 minutes
This recipe is sufficient to fill and top a
9" round cake.
4oz butter, diced
8oz cream cheese
4 cups of powdered sugar
2 tsp vanilla extract
1. Place the diced butter into a mixing
bowl.
2. Press the HeatSoft™ button and mix
using speed 2 for approx. 1 minute
until softened.
3. Add the cream cheese and continue
mixing with HeatSoft™ for approx. 1
minute until softened and combined.
4. Add ½ of the powdered sugar, along
with the vanilla extract and mix until
combined.
5. Add the remaining sugar and mix until
smooth.
6. Chill until required.
