Pineapple Coconut
Spritz Cookies
31/4 cups all-purpose flour
1 teaspoon baking powder
11/2 cups (3 sticks) butter, softened
1 cup granulated sugar
1 egg
3/4 cup shredded coconut, finely chopped
1 teaspoon pure vanilla extract
1/2 teaspoon pineapple extract
Fresh Orange
Spritz Cookies
21/4 cups all-purpose flour
1 tablespoon finely chopped orange zest
1/4 cup finely chopped pecans (optional)
1 cup (2 sticks) butter, softened
1 cup granulated sugar
1 egg yolk
2 tablespoons orange juice
Preheat oven to 375°F. In large bowl, combine flour and baking powder. In large bowl,
beat butter and sugar with electric mixer until light and fluffy. Add egg, coconut and
extracts; mix well. Add flour mixture to butter mixture; mix just until combined.
Place dough in Cookie Master and with desired disk press cookies onto ungreased
cookie sheet.
Bake 10-12 minutes or until edges are lightly browned. Cool 2 minutes on cookie sheet;
remove to cooling grid and cool completely.
Makes about 6 dozen cookies.
Preheat oven to 350°F. In large bowl, combine flour, orange zest and, if desired, pecans.
In large bowl, beat butter and sugar until light and fluffy. Add egg and orange juice; mix
well. Add flour mixture; mix just until combined. Dough should be soft but not sticky.
Place dough into Cookie Master and press cookies onto ungreased cookie sheet.
Bake 10-12 minutes or until edges are lightly browned. Cool 2 minutes on cookie sheet;
remove to cooling grid and cool completely.
Makes about 5 dozen cookies.
