Plantain &
Cheese Empanadas
Ingredients:
•
4 ripe plantains
•
2 tbsp sugar
•
A pinch of salt
•
2 tsp vanilla extract
Steps:
•
Slice the plantains in half.
•
Boil the plantains for 20-30 minutes (until peels fall off).
•
Remove from water and peel.
•
In a large bowl mash the plantains.
•
Add sugar, vanilla, and salt to mixture.
•
Kneed in the flour.
•
Roll the dough in to small balls.
•
Follow the steps to make empanadas using the included plastic sheet
(WHITE CORN FLOUR DOUGH).
•
Fill your empanadas with mozzarella.
•
Serve and enjoy!
