Guacamole
This extremely healthy avocado cream is popular throughout the soush americo region whether served
with Mexican nachos or argentinian steak, this green cream is a highlight for many dishes.
2 ripe avocados
2 tomatoes
2-4 cloves of garlic to suit personal taste
1/2 lime or lemon
Salt and pepper
Cut the avocados in half and remove the stone, separate the flesh from the skin with a spoon and
mash.
Put the avocados in the blender jar, crush the garlic and add it to the jar, squeeze the lime or lemon
and pour in the juice, puree for about a minute on speed 2, season with salt and pepper, add more
lime juice and garlic to taste and stir briefly. Transfer the avocado cream to a bowl. Chop the tomatoes
into small pieces and mix with the avocado cream by hand. Do not let stand too long or the cream will
oxidise. Drizzle with lemon or lime juice if necessary.
