For the grill enthusiast who loves smoke infused flavors, the smoker
/ infuser is the perfect solution for steaming meats and vegetables or
a simple grill humidifier to help retain the natural juices and flavors of
your grilled foods. Compatible with the STOK insert system, the cast
iron smoker /infuser can be used on your STOK charcoal or gas grill.
uSinG tHe Smoker / infuSer
See Figures 1 - 2.
The cast iron smoker pot and infuser tray are pre-seasoned.
Before use, rinse both pieces with hot water and dry thoroughly.
Using the insert removal tool (not included) or heat-resistant oven
mitts, lift and remove the grate insert from your grill.
Place the smoker pot in the opening from where the grate insert
was removed and fill bottom of pot with wood chips or your favorite
flavored liquid (e.g. water, beer, wine.)
Using the insert removal tool, place the infuser tray into the smoker
pot, over the wood chips or flavored liquid.
note: The infuser tray allows wood chips to begin smoking more
quickly. It can be used as a cooking surface when steaming. If
you are using the Infuser for steaming foods, apply a light coat
of oil to the surface to prevent food from sticking.
Using the insert removal tool, place the grate insert on top of the
smoker pot.
When food is done, grate insert and infuser tray may be removed.
oPerAtinG tiPS
For best results with STOK charcoal grills, provide direct heat to
the smoker pot and allow it to get hot enough to turn the wood
chips or liquid contained in it to smoke or steam before grilling.
For best results with STOK gas grills, burners directly beneath the
smoker pot should be on high to allow the wood chips or liquid
(in the Smoker pot) to create smoke or steam before grilling.
cLeAninG tHe Smoker / infuSer
Allow the smoker pot and infuser tray to cool completely.
Remove the Smoker pot from the grill and clean using a stiff
nylon brush and hot water. For best results, the use of soap is
not recommended. Do not clean in the dishwasher.
Dry thoroughly. Do not allow the Smoker pot or Infuser tray to air
dry as this can allow rust to form.
Apply a light coating of oil to both the Smoker pot and Infuser
tray before storing.

If food begins to stick to the surface of the cast iron or rust spots
begin to form, re-seasoning your cast iron cookware is required.
