MACHINE PREPARATION
Check Machine
Before operating the unit, verify the following:
• Strainer is in place and clean.
• Wash and rinse arms are screwed securely into place and end-caps are tight.
• Wash and rinse arms rotate freely.

PRE-SOAKING & WASHING
Pre-Scrapping
• Dump and hand-scrape dishware to remove foodsoil and
other debris.
• Soak in warm water if necessary to loosen food particles.
• Place scrapped ware into dishrack.
• Rinse ware with the pre-rinse hose.

CLEAN-UP
Cleaning
• Close the door.
• Turn the unit off by flipping the "ON/OFF" button to the "OFF" position.
• The drain pump will activate and empty the unit of water.
• When draining stops, open the door, remove and clean the strainer, and set
aside.

1. Follow "Fill Machine" instructions above.
2. Flip the "WASH/DELIME" button to "DELIME."

DISHSTAR
Check Chemical Supplies
• Check detergent and rinse-aid levels in containers.
• Replace if empty and prime lines.
Pre-Soaking Utensils
• Fill sink with hot water and add presoak solution.
• Immediately place flatware in the sink.
• Soak flatware 15-30 minutes (no longer).
• Place flatware in proper rack and rinse .
DO NOT ALLOW PRESOAK SOLUTION IN DISHMACHINE
• Wash the flatware in dishmachine.

• Unscrew the wash and rinse arms from their manifolds.
• Verify the nozzles and arms are free from obstruction. If clogged, remove
end-caps, clean nozzles with a brush, and flush with fresh water.
• Replace end-caps and ensure they have been tightened.

3. Add deliming solution per chemical supplier's instructions.
4. Close the door.
5. Push the "START" button.

• Close the door.
• Flip the "ON/OFF" switch to the "ON" position.
• The unit will automatically begin to fill.
• Once the wash tub is filled, wait for five minutes.
• Flip the "ON/OFF" switch to the "OFF" position and wait for unit to drain.
• Flip the "ON/OFF" switch to the "ON" position and wait for unit to fill.
• Ensure wash temperature is at least 150 °F before operating the unit.
Washing & Storage
• When wash is complete, remove and shake rack to
remove excess water.
• Sort flatware into cylinders, handle down, and wash a
second time.
• Place flatware in clean cylinders with handle up.
• Spray or wipe out interior of machine.
• Replace wash and rinse arms.
• Replace the strainer and ensure it is laying flat.
• Use stainless steel polish to clean and protect outside of dishmachine.

6. Wait until cycle is complete and inspect the inside of the unit. If not delimed, run again.
7. Remove rinse arms and place in sink with deliming solution. Leave for amount of time
recommended by the chemical supplier.

Washing a Rack of Ware
• All dishes, cups, and flatware should be placed in proper
racks.
DO NOT OVERLOAD RACKS
• Open the door completely.
• Slide the rack into the unit.
• Close the door.
• Press the "START" button and the unit will begin the
wash cycle.
• After the cycle light turns off, the cycle is complete.
• When the flush light is on (steady, not flashing), it is
recommended that tank water be drained and refilled.
• Inspect strainer regularly throughout the day to ensure it
is not clogged.
