Soaking Wood Chips :
Note: soaking wood chips will prevent the wood chips
from igniting and will produce better smoking results.
For best results soak your wood chips as follows:
• Small wood chips soak 1 – 2 hours before use
• Larger wood chips soak 2 – 3 hours before use
Adding Wood Chips
Fill the center section of the wood chip pan with wood
chips. Pour water into the surrounding outer section of the
pan. The surrounding water will prevent the wood chips
from overheating and burning out too quickly. One full
pan is typically enough for several hours of smoking.
Once the pan is filled, set the pan in the smoker and
cover with lid.
To add wood chips while cooking, we recommend using
tongs or long handled pliers to remove the pan lid and to
place the pieces into the wood chip pan without
removing the pan. It is not recommended to remove the
wood chip pan while the smoker is in operation.
