BREAKFAST EGG SALAD
INGREDIENTS

4 hard boiled eggs
•
1 tablespoon fresh lemon juice
•
Salt and ground pepper
•
1/3 cup watercress, thick ends trimmed
•
1 teaspoon Dijon mustard
•
1/4 avocado, diced
•
2oz sliced smoked salmon (about 2 slices)
•
2 slices whole-grain bread, toasted
DIRECTIONS
1.
After you´ve boiled the eggs following the instructions of your
Egg Cooker, peel them and separate whites from the yolks. Save
1 yolk and chop the eggs whites into small pieces.
2. In a bowl, whisk together the mustard and the lemon juice.
3. Grate the egg yolk into the mustard mix and combine.
4. Stir together chopped egg whites and diced avocado and season
with salt and pepper
5. Place watercress, egg salad, mustard mix, and smoked salmon
on toast to your liking.
6. Serve and enjoy!
