Stand Mixer Use instructions
Shortcrust pastry
Ingredients
500g plain flour
350g butter or lard
3 tablespoons caster sugar
2 teaspoons salt
1 egg
125ml water
Method
In the stand mixer, combine flour, butter or lard, sugar and salt. Blend together with a pastry cutter
until crumbly.
In a small bowl, mix egg with water. Blend into flour mixture. Chill in refrigerator until ready to use.
Pastry
Ingredients
280g (10 oz) plain flour
280g (10 oz) butter
100ml (3 1/2 fl oz) water
1 teaspoon salt
Method
Put butter and flour in the stand mixer bowl and mix then add water gradually until flour all forms
together.( not too wet or too dry)
Give it a quick kneed on a floured surface and then break into say 3 pieces.
Each piece roll out one at a time then fold over then roll out and then fold over until you have like
a block of butter or marg shape. Then place in cling film and put in fridge or place in a freezer bag
and place in freezer.
Ensure you leave it in fridge for at least 20 minutes before using.
