Poultry skin is fatty so you should expect some flare-
ups. To minimize flare-ups, try grilling poultry in a
cooking pan.

both sides until seared. Reduce heat and use cook-
ing time as a guide or until fish is opaque but still
moist.
Vegetables and Fruit
Preheat the grill using the highest setting for 15-20
minutes with the Lid closed. Open Lid and place food
on the Cooking Grid then reduce heat. Vegetables
and fruit that work best on the grill are relatively soft
and require a short cooking time: mushrooms, zuc-
chini, tomatoes and skewered fruit such as apricots,
peaches, pineapple, strawberries and kiwis.
