Chunky Salsa

-ounce) whole tomatoes, drained

2 teaspoons tomato paste
1 jalapeño, chopped
2 tablespoons finely chopped
canned green chili peppers
Combine ingredients in mixing bowl. Mix on LO until tomatoes are still slightly
chunky. Do not overmix. Let stand 30 minutes at room temperature. Store in
refrigerator. Serve as a relish with a Mexican dish or with corn chips.
Makes 2 cups.
Guacamole Dip
2 large ripe avocados, peeled,
pitted and cut into eights
1 tablespoon lemon juice or lime juice
1 clove garlic, minced
Combine ingredients in small bowl. Blend on LO, lifting blender out of mixture
until all avocados are mashed. Makes 1 cup.

Graham Cracker Crust

Break 5 cracker squares into small pieces; process in heavyweight foodsafe plastic
bag or plastic container with cover. Process on LO and then HI until crushed into
fine crumbs; repeat until all crackers are crushed. In 8- or 9-inch pie pan, combine
crumbs and sugar. Stir in melted butter, mixing well. Firmly press mixture evenly
over bottom of and sides of pan. Chill about 1 hour or until firm. Makes one 8- or
9-inch crust.
Chocolate Wafer Crust

Break 6 cookies into small pieces; process in heavyweight foodsafe plastic bag or
plastic container with cover. Process on LO and then HI until crushed into fine
crumbs; repeat until all cookies are crushed. In 8- or 9-inch pie pan, combine
crumbs and butter. Stir in melted butter, mixing well. Firmly press mixture evenly
over bottom of and sides of pan. Chill about 1 hour or until firm. Makes one 8- or
9-inch crust.
Black Bottom Cheesecake
1 box instant cheesecake mix or home recipe
1 8- or 9-inch chocolate wafer crust (see previous recipe)
Follow package directions for recommended liquid amount. Mix on HI until
smooth and thick. Pour cheesecake mix into chocolate wafer crust. Chill
1 hour or until firm. Makes 8 servings.
