NACHOS SUPREME

1 lb. ground beef
or 1 lb. boneless,
skinless chicken
•
2 tablespoons
tomato paste
•
2/3 cup water
•
1 bag of tortilla chips
•
1 large onion, chopped
•
2 garlic cloves, minced
•
1 can refried beans
•
2 cups shredded
cheddar
•
1/2 cup of jalepenos
•
1 can black beans
•
1 avocado, diced
•
1/4 cup fresh
cilantro leaves
•
Sour Cream or hot
sauce for drizzling
Makes 4 servings
BEEF/CHICKEN BURRITO
•
1 lb. ground beef
or 1 lb. boneless,
skinless chicken
•
Taco seasoning
•
2/3 cup water
•
1.5 cup white or
brown rice
•
1/2 cup black beans
•
1 tomato, diced
•
1/4 onion, diced
•
1/4 cup fresh
cilantro leaves
•
Shredded cheese
•
Shredded lettuce
•
Sour Cream/hot
sauce for drizzling
•
3-4 large tortillas
Brown ground beef over medium heat
until no pink remains. Drain fat.
If using chicken, Shred chicken and cook in a saucepan over
medium hit for 10-15 min until meat is no longer pink.
Add seasoning mixture, water and tomato
paste. Add to center heating pot.
Place desired toppings (onion, tomato, cheese, jalepenos,
refried beans, etc.) and place in lazy susan compartments.
Place tortilla chips on a plate.
Place meat on top of chips.
Cover meat with desired toppings.
Enjoy!
Brown ground beef over medium heat
until no pink remains. Drain fat.
If using chicken, Shred chicken and cook in a saucepan over
medium hit for 10-15 min until meat is no longer pink.
Add seasoning mixture, water and tomato
paste. Add to center heating pot.
Place a burrito (may warm it up in
microwave) on a work surface.
Place desired amount of rice just below the centre. Top with
beef or chicken, then some lettuce, black beans, tomato, a
sprinkle of red onion, cheese and sour cream/hot sauce.
Fold up the bottom to cover the filling then
fold the edges in. Roll up tightly, then wrap
in foil. Serve as is or heat per below.
