- Do not install this device near open fires or other heating devices.

- Do not install the device in a wet or humid place.
- The electrical cable must be protected at least 16 amps. The device must be plugged directly into a wall
outlet. Using a power strip will cause the device to trip.
- To avoid damage to the compressor, the device must not be tilted
more than 45° during transport or installation.
- Leave the device to rest for 2 hours before its first use.
A. Before use:
1. Clean the inside of the device with a mild disinfectant.
2. Plug the device into a 220-240V outlet.
3. Temperature and humidity are already set to 1.5 and 82% humidity, which is perfect for dry aging beef
and pork.
4. Meat for dry aging must be fresh, i.e. no more than 5 days after slaughter. Vacuum-ripened meat can
also be used, but for a maximum of 14 days (please remove the packaging film).
5. Open the package and remove the foil. Place the meat on the stainless steel plate and put the plate
inside the appliance. Check if there is water in the plate every 2 or 3 days. If there is water, please drain it.
6. The maximum load capacity of the shelves is 20 kg per piece. Optional hooks and brackets are available
for hanging steaks with a length of 0.5 to 0.9 meters.
7. Please wear protective gloves when contacting meat. No one should ever touch meat without gloves.
8. The ideal maturation time is between 25 and 28 days, but it is also possible to exceed 4 weeks.
