4. 4. Operation Operation

This machine is designed to shape the bread dough previously
fermented in a facility for this purpose (fermentation chamber).
The shaper is multiuse, and can work with all types of hard and
soft doughs without mistreating them.
These spheroid shaped portions (when they enter the machi-
ne) come out in the shape of the loaf, with a weight of between
30 g and 1,250 g, in accordance with the characteristics re-
quested by the machine operator.
By belt transmission the motor located underneath the chassis
engages the driver wheel which, through the set of pinions
located in the fl attener, moves the machine mechanism.
When leaving the chamber the piece of dough drops onto the
input table known as PRE-ROLLER. It is then pressed bet-
ween two rollers and deposited on the endless belt, where the
dough is rolled with the help of the upper fl attener.
The required loaf length is achieved by adjusting the upper and
lower dough stretching regulators using the wheel and the side
handle respectively.
This circle allows a perfect shape to be obtained. The shaped
bread is deposited on the collection belt.
The main components of the machine are described below:

Input belt and pre-roller regulator
250 mm belt which takes the dough to a height-adjus-
table nylon roller which carries out the PRE-ROLLING.
(The PF model does not allow the pre-roller to be re-
gulated).

Roller . This comprises two rollers in contact with the
dough, adjusted using the graduated sector lever lo-
cated on the side of the machine.
•
Upper wheel
the dough extender, the purpose of which is to give
the loaf its format.
•
Side handle . This allows the lower stretching table to
be regulated, in order to give the loaf its shape.
•
Output conveyor belt
portion of dough, in loaf shape, discharged by the
shaper belt.
The output conveyor belt has advantage that the second sec-
tion can be opened for easy cleaning.
