During the installation of the machine, the Mainte-
nance Technician must replace the water contained in
the hydraulic circuits by following these steps:
• when installation is complete, the appliance has to
be started, brought to the nominal working condi-
tion and left for 30 minutes in the "ready to operate"
condition;
• afterwards, the appliance has to be turned off and
emptied of the first water introduced in the whole hy-
draulic circuit, to eliminate possible initial impurities;
• following this, the equipment must be charged again
and taken to its nominal operating conditions;
• After having reached the "ready for operation" status,
the following dispensing actions must be carried out:
- for each coffee unit, carry out a continuous deliv-
ery, in order to release at least 0.5 litres from the
coffee circuit. In the case of several dispensing
points matched with the same exchanger/coffee
boiler, divide the volume on the base of the num-
ber of the dispensing points;
- discharge the whole volume of hot water from
the boiler (3 litres for 1GR, 6 litres for 2GR, 8 litres
for 3GR, 11 litres for 4GR) continuously dispensing
from the specific spout. In case of multiple dis-
pensing points, subdivide this volume according
to the number of dispensing points;
- continuously release steam for at least 1 minute
for each steam dispensing point.
If the machine remains inactive for a time longer than 1 week, the
Maintenance Technician must renew 100% of the water contained
in the hydraulic circuit, as indicated above.

6.5.1 Grinding and dosing coffee
It is important to have a grinder-dispenser device
next to the machine so that the coffee can be ground
on a daily basis.
The coffee must be ground and dispensed accord-
ing to instructions provided by the manufacturer of the
grinder-dispenser device. The following points should
also be kept in mind:
• To obtain a good espresso it is recommended to not
keep large amounts of coffee beans. Observe the
expiry date indicated by the producer;
• Never grind large volumes of coffee, it is advisable to
prepare the amount that can be held in the dosing
device and use it if possible by the end of the day;
• Do not buy pre-ground coffee, as it perishes quickly.
If necessary, buy it in small vacuum-sealed packages.
6.5.2 Preparing the filter holder
• Fill the filter with a dose of ground coffee (approx. 6-7
g) and compress it with the press;
• Hook the filter holder to the group without closing it
too tightly in order to prevent the gasket from wear-
ing excessively;
• For the same reason it is recommended that the
edge of the filter is cleaned before attaching the filter
holder to the dispensing group;
• Follow the procedures specified by the manufacturer
of the grinder-dispenser.
