21.6 Clean the stainless steel
Certain situations can cause the formation of rust on the surfaces in steel, such as:
remains of iron left on damp surfaces, limescale, unrinsed chlorine-based or ammonia-based deter-
gents, encrustations or food residue, salt-salt solutions, dry residue of evaporated liquids
Remedy
recent stains and rust:
clean with shampoo or neutral detergents, using a sponge or a rag.
When finished, eliminate any detergent residue, rinse and thoroughly dry the surfaces.
old stains and rust:
use chemical substances on the stainless steel that contain 25% of nitric acid or similar
substances.
persistent stains and rust:
sand with a stainless steel brush, wash with detergent and dry thoroughly.
CAUTION! Slippery floor. Falling.
Remove from the floor any items such as sponges, rags, waste of water or detergent.
Carefully clean any residue of detergent or sanitizer.

Carefully follow the sanitizing, rinsing and drying procedures to prevent proliferation of
harmful bacteria.
21.7 Inspect the parts
Once you have completed sanitizing, rinsing and drying, proceed as follows:

Once the internal operating temperature has been reached, it is possible to load the products.
