For a proper operation of the machine and for a best preservation of food we suggest to set the "set point" of
thermostat +2 °C.
CLEANING OF THE MACHINE
For cleaning the machine DO NOT USE ethyl alchohol, hydrocarbon (petrol), ammonia or derivative. We
suggest to use neutral cleanser and water.
CLEANING THE INSTRUMENT
To clean the instrument does not use ethyl alcohol, hydrocarbons (petrol), ammonia and derivatives. And
'advisable to use neutral detergents and water.

14.FOOD HYGIENE AND CLEANING

Before carrying out any cleaning operation, disconnect the electronic thermoregulator, turn the main
switch off and unplug the unit from the socket interlocked with switch.
Once a day
Clean all the machine parts using a cloath soaked in warm water and neutral detergent; never use abrasive

powder or detergents that could damage the system internally or externally, especially the glass or
polycarbonate parts.
Rins and dry with a soft cloth.

To ensure the equipment works properly and heat is trasmitted efficiently, the tray has to be kept clean.

Most importantly, any limescale has to be cleaned from the tray periodically if untreated water is used.
Use suitable, but NON-corrosive products to descale the tray.
To clean up the sensor with not corrosive antilimestone substances.

Every 15 days
Clean the refrigeration unit condenser with a brush or vacuum cleaner (to clean the

condenser, remove the wooden front grille).
In the event of prolonged inactivity
Disconnect the electronic thermoregulator;

Turn the main switch off;

Unplug the unit from from the socket interlocked with switch;

Take all the food out;

Clean the machine thoroughly with neutral disinfectants so as to protect it against oxidation (see chapter 14

– 15);
Leave the machine hood open (if openable) to prevent the formation of mould, bad smells and oxidation;

Cover the system to protect it from the dust.


15.MAINTENANCE AND CHECKS

Before carrying out any maintenance operation, disconnect the electronic thermoregulator, turn the main
switch off and unplug the unit from the socket interlocked with switch.
