The simmering plate

This is the cooking element preferred by professionals,
because of its great versatility.
One of its many advantages is that it recreates the type
of heat once provided by old cast-iron wood and coal
burners.
Nothing better has been invented since!
Fitting the simmer plate
The simmering plate is designed to replace the two
centre pan supports. Remove the two centre pan
supports. Put them somewhere safe in case you want to
use them in the future.
Remove the centre ring from the simmer plate.
If the plate is dropped on the hotplate, the support feet
could damage the nish. Carefully place the simmering
plate in position, with the La Cornue name at the front.
The front of the simmering plate should be level with the
front of the outer pan supports.
The plate should only be tted over the centre burner
- don't try to use it over the outer burners.
Re t the centre ring. The Simmer plate is not intended to
be used with the centre ring removed.
Using the simmer plate
The simmer plate gets very hot in use and stays
hot for a long time after use.
Do not touch it unless you are certain it is cold
Light the centre burner. Push in and turn the centre knob
to the solid ame symbol ( ).
Keep holding the knob pressed in to let the gas through
to the burner for few seconds. The igniter should spark
and light the gas.
If, when you let go of the control knob, the burner goes
out, the safety device has not held in. Turn the control to
the o position and wait one minute, then try again this
time holding in the control knob for slightly longer.
In a power failure the burner can be lit with a match
by removing the plate centre ring to gain access to the
burner.
Turn on your simmering plate before preparing
your ingredients, as a 15 minute preheating time is
recommended.
