Spinach & feta Christmas trees
Preparation: approx. 20 min. | Baking: approx. 10 min. | Yields approx. 24 pieces
1 Puff pastry sheet, thawed, rolled to
approx. 10 inch x 15 inch
1 Egg, beaten
2 oz Frozen creamed spinach, defrosted
2 oz Feta cheese, crumbled
Decoration: Garnish Christmas trees with
coarsely chopped pine nuts and pumpkin seeds.

1. Prepare the dough, form the trees, and brush
them with egg (refer to instructions p. 6).
2. Baking: approx. 10 min. on the middle rack
of the oven; preheated to 400°F. Remove from
oven and cool slightly, then break trees apart.
3. Puree spinach and feta. Portion filling in
the middle of half of the trees, sandwich
them together.
Tips:
• Use paneer cheese instead of feta.
• Serve Christmas trees on tomato sauce.
