Beef fajitas

cup fajita seasoning, divided

tsp oregano, divided

cup vegetable oil, divided

cup red wine vinegar, divided

pound sirloin, flat-iron or flank steak

medium onion, cut into thin strips

medium green bell pepper, cut into thin strips

flour tortillas, large
Optional toppings:
Guacamole, salsa, cheese and sour cream
Sprinkle meat with oil, vinegar and seasonings on both sides. Place steak on oven-
safe dish or cover the high rack and place in oven. Roast at 450°F for 5 minutes on
each side. Remove steak and let rest. Combine onions and bell peppers with
remaining oil, vinegar and seasonings and place in oven-safe dish on high rack.
Roast at 450°F for 5 minutes, toss, turn and roast for 5 more minutes.
Stuffed pizza rolls

8oz crescent rolls, refrigerated

6oz pepperoni slices

1oz mozzarella cheese sticks (cut in half)

cup pizza or marinara sauce

tsp Italian seasoning
Separate the rolls into 8 triangles. Place 1 tsp of pizza sauce onto the triangle and
spread evenly. Put 2 pepperoni slices and one piece of cheese on each triangle.
Sprinkle with Italian seasoning. Roll up, starting with the wide end, folding over
ends to seal in the cheese. Sprinkle Italian seasoning over the outside of each roll.
Place pizza rolls on an oven-safe dish or shallow pan on the low rack inside the
oven (you may also use the low rack alone, wrapped in aluminum foil). Bake at
375°F for 10 minutes, turning rolls halfway through.
