Mahi Mahi Fish Tostadas
Tired of the same bland, tasteless battered frozen fish? Here is a simple recipe that your kids,
young and old, will love to help prepare and eat! Place your family's favorite snack chips in a
large zippered bag...give your kiddies a saucepan or a rolling pin... and whack those chips into
tasty crumbs! Use any frozen, (thawed) firm white, skinless fish filet. Although we've taken our
fish south of the border, these fried nuggets are perfect in warm sandwiches, added to an Italian
chopped salad or as a star ingredient in a healthy Asian wrap.
Serves 6
•
1 lb. fresh Mahi Mahi filet, skinless
•
6 corn tortillas
•
2 eggs
•
1/2 teaspoon cumin
•
1-1/2 cups Dorito's (or any corn or potato or vegetable chips of your choice)
•
olive oil spray
Toppings
•
refried beans
•
shredded lettuce
•
chopped tomatoes
•
guacamole
•
chopped leftover vegetables
•
pickled jalapeno peppers
•
sliced, pitted black olives
•
grated Mexican cheese
1.
Whisk eggs and cumin in a flat bowl.
2. Use a rolling pin on a flat plate to smash chips into a coarse, crumb texture.
NOTE: This is a good place to have the kiddies help!
3. Cut fish into 1-inch pieces. Dip the fish pieces into eggs to coat, then dip all sides of the fish
into the crumbs. Place prepared fish fillets into the frying basket. Spray with oil.
4. Use food MENU preset for FISH. When the FISH icon
POWER BUTTON to begin air frying at 400ºF. Change TIME to 3 minutes.
5. Check to make sure fish is flakey and cooked through. If more fry TIME is needed, set
Air Convection Fryer to 370ºF for 2 minutes. Check at 1 minute intervals until fish is done.
6. Remove air fried fish to a plate and allow to cool slightly.

Place 3 corn tortillas into the frying basket. Spray with oil.
8. Set Air Convection Fryer to 370ºF for 4 minutes. Flip tortillas at half time. After 4 minutes,
the tortillas will be pliable enough to flatten; repeat to make 6 toasted tortillas.
9. Set toppings out for serving. Place each toasted tortilla onto a plate. Begin with beans or
salsa as a base. Add toppings of choice and then a generous handful of grated cheese.
10. Place back into the into the frying basket. Set Air Convection Fryer to CHEESE MELT
400ºF. Change TIME to 3 minutes.
11. Remove tostadas to a plate, add more toppings if desired. Serve with rice and refried beans.

Pistachio Stuffed Bacon-Wrapped Figs
Makes 28 to 32 appetizers
•
1/2 cup water
•
1 orange, zested and juiced
•
1/2 teaspoon ground cinnamon
•
1 tablespoon brown sugar
•
1 teaspoon natural vanilla extract
•
1 cup (7 to 8) large, dried whole figs
•
4 oz. shelled pistachio nuts
•
5 – 6 slices lean, high-quality bacon
1.
Place bacon in the freezer for 20 minutes before cutting to make handling easier.
2. Combine water, orange juice, orange zest, cinnamon, brown sugar, and vanilla in a small
saucepan. Bring to boil, add the figs, lower the heat to and cook until soft, about 10 minutes.
3. Cut each slice of bacon lengthwise down the center, then 3 times across to make 6 bacon ties.
4. Quarter each fig. Stuff 2 to 3 pistachios into each fig center.
5. Wrap stuffed figs with bacon.
6. Set Air Convection Fryer to 400ºF and check bacon for doneness at 3 minutes. If needed,
cook for 1 additional minute at a time until bacon is golden brown to your liking. Transfer
wrapped figs to a paper towel to drain. Serve with toothpicks.
