What kinds of food can you fry?
Most foods (vegetable, fish, meat, baked goods)can be cooked in a
fryer. However, it is important to prepare the food correctly:
 Only fry in small quantities. Large quantities increase the
frying time and the food will absorb
 If food items have been washed beforehand, they must be
dried well before you put them in
 Vegetables ,meat and fish should be cut into small pieces
before frying. Small pieces reduce
the food will therefore absorb less fat.
 Some food items should be coated with breadcrumbs before
they are dipped into the hot oil.
 Ensure that the breadcrumbs stick as well as possible to the
food --if they fall off during frying, this will contaminate the oil.
When is the food cooked?
If the results of frying do not match what it says for the cooking times
in your recipe, It could be for the following reason/s:
 Condition of the food e.g. frozen ,
 Size of food items,
 Volume of food,
 Temperature of the cooking oil
What type of oil/fat should you use?
A huge range of different oils and fats are available, but only some of
them are actually suitable:
 The oil/fat must be suitable for frying at high temperature. The
smoking point of the oil/fat must be above 200℃.The smoking
point is temperature at which oil/fat starts to give off smoke.
