y Transport :
- Preheat the empty box for 30 minutes.
- Insert the hot food containers.
- Unplug the box and transport. The power lead must be disconnected from the container. Temperature holding is
guaranteed for a maximum of 2 hours, when transporting one container only.
- Upon arrival, the food is ready to use, or the box may be plugged in again to ensure temperature holding.
y Temperature holding :
- Preheat the empty box for 30 minutes.
- Insert the containers with the hot food. With the box plugged in, the containers will be held at a temperature of over
63°C.
y «Sherpa» insulated boxes :
- Voltage : 230 V single phase 50/60 Hz
- Power : 300 W - Amperage : 1,3 A - Protection index : 24.
y 0.75 sq.mm diameter cable supplied with appliance H05RN-F, 2 phases plus earth. In the event of deterioration, replace at
once. Do likewise for the electrical box.
y The appliance must be connected to a monophase earthed socket linked to a highly sensitive differential device protected
against excess current.
y The appliance must not be plugged in without a monophase socket. The manufacturer shall not be liable in the event of any
modifications to the electrical connection specifications.
y «Sherpa» insulated boxes :
- Temperature control range: 65° to 75°C.
- Press the "set" button and release.
- The temperature setting is displayed.
- Set the new temperature by using the two buttons on the left to increase or decrease the amount.
- Press the "set" or the "fnc" button
y Unplug the appliance before performing any cleaning or upkeep operations. The heating block must not be cleaned by
steam or water jet or in a wash tunnel.
y The box and heating block should be cleaned using a sponge. Live parts (fan, resistor, etc.) must remain clean and free
from food spatter at all times.
y The heating block (fixed by two screws inside the door) must be dismantled before cleaning the box by steam or water jet, or in a
wash tunnel. See storage/care and maintenance precautions on previous page.
y Heating block hood : methylated spirit, soapy water.
y Food residues on the fan can cause it to jam, triggering the safety thermostat. If the fan propeller becomes
jammed by food spatter, it may require cleaning. In this case, electrically disconnect the apparatus, then
dry clean the fan (by removing the 4 cover clamping bolts).
IMPORTANT: never force the propeller.
Then re-fit the cleaned cover before resetting the heating block (see button position in drawing opposite).
y General information on stainless steel : The term "stainless steel" can cause some confusion. It is steel
which "resists" to corrosion in certain conditions.
Any type of stainless steel can be corroded:
- austenitic, e.g. "stainless steel 304" also called 18/10.
- ferritic, e.g. "F17" or "F18TNb".
Resistance to corrosion of stainless steel results from the existence of a passive layer of chromium oxide which is renewed
spontaneously when in contact with the air. Any phenomenon interfering with the creation of this layer is likely to cause
corrosion.
This is why stainless steel surfaces must be regularly rid of miscellaneous contamination which may damage the level of
resistance of the passive layer, and also ensure the maintenance steps are observed. (Preparation to cleaning / cleaning /
rinsing / disinfection / rinsing / drying).
Regular maintenance with extended rinsing with water is the best method to renew and maintain the passive layer.
Each of the steps linked with maintenance presents risks of damaging the passive layer: using hard water / overdosing
detergents / using chlorine-based detergents / food residue on the products / insufficient rinsing.....
Whenever corrosion appears, the element or step having led to it must be identified.
Advice :
- maintain stainless steel surfaces clean and dry. Ensure there is a sufficient flow of air.
- clean daily to remove scale, grease and any food residue. Corrosion can form under these layers by lack of air inlet.
- daily cleaning can be performed with a damp cloth. If necessary :
* use soapy water, cleaning products with low chloride content, javel-free detergents, window degreasers.
* remove hard stains with a non metallic brush (plastic material, natural bristles or stainless steel wool).
- do not scratch the surfaces with metals other than stainless steel, and more particularly, never use iron brushes.
- remove fresh rust stains with soft abrasive agents or fine emery cloth.
- for larger stains, use hot oxalic acid with a 2-3% concentration. If necessary, apply a treatment with nitric acid
concentrated at 10%.
