GRILLING DIRECTLY
GRILLING DIRECTLY IS GREAT FOR
SMALLER CUTS OF MEAT AND OTHER
FOOD THAT CAN COOK QUICKLY. YOU CAN
ACHIEVE THOSE GREAT LOOKING GRILL
MARKS WITH THIS METHOD.
• The heat deflector is not needed using this
method. However, you can use the heat
deflector by rotating it to the open position.
Use this method for searing and reverse
searing.

GRILLING INDIRECTLY
GRILLING INDIRECTLY OR NOT
COOKING OVER THE COALS, IS COMMON
FOR SMOKING FOOD LOW AND SLOW.
• The heat deflector is used during this
method. Typically this method is used in
longer cooks and for larger cuts of meat.
The food is cooked at temperatures under
275F for many hours to render the fat and
make the meat tender.
• When cooking indirectly, make sure to
position the heat deflector window in
accordance with the grate hinge. This will
make adding more charcoal or wood easier.
NOTE: When you are done cooking, turn the
controller off and unplug the adaptor from the
outlet and unit. Close the air damper at the top.
This will cut off the air supply to the coals and
allow the grill to begin cooling down. Once cool
to the touch, you can place your cover on the
grill and store out of the way until next use.
