MEAT -
LAMB
Ingredients
• 1 kg boneless lamb, cut
into large pieces
• 2 cups sliced potatoes
• 1 cup converted rice
• 2 onions, sliced
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 1 teaspoon ground cumin
• 500g courgettes, sliced
• 350g artichoke hearts
,halved
• 2 cups diced tomatoes
Method
Place sliced potatoes in the
bottom of the slow cooker.
Layer remaining ingredients
on top. Pour 2 cups of wa-
ter (or broth) over all. Cover
and cook on low 8 to 10
hours.

Ingredients
• 1 tablespoon vegetable oil
• 4 loin lamb chops
• 2 tablespoons all-purpose
flour
• 2/3 cup beef broth or
chicken broth
• 410g tinned diced toma-
toes
• 1 clove of garlic, minced
• 1 tablespoon tomato
paste
• 4 ribs celery, thinly sliced
• 1 tsp salt
• freshly ground pepper to
taste
• chopped parsley
