PASTA MACHINE
Press a piece of dough between the two rollers and turn
the crank handle clockwise.
Repeat this operation until a smooth sheet of pasta is
obtained, leaving the regulator knob to position "1".
When the pasta rolls out, fold the sheet in half and pass it
through the rollers 5-6 times again (if necessary, dust the
pasta sheets with flour).
Once a regular shape has been obtained, pass the pa-
sta sheet through the rollers only once with the regula-
tor knob set to the second position; gradually reduce the
space between the rollers by one notch at a time, each
time passing the sheet of dough through the rollers (dust
the dough with flour every time you pass it through the
rollers). Stop once the dough reaches your desired thick-
ness (the minimum thickness that can be obtained is ap-
proximately 0.2 mm when the regulator knob is adjusted
to the "9" position).
Passing pasta sheets through the rollers gradually redu-
cing the space between them is an important operation
which is part of the final process of kneading; it is impor-
tant to make good fresh homemade pastas.
USE OF THE CUTTING ATTACHMENT
At the rear of the flat rollers there are two retaining slots
where the cutting attachment must be fitted.
Be sure to fit the cutting accessory to the machine body,
matching the openings to the catches on the attachment,
then push it gently downwards to firmly lock the attach-
ment to the pasta machine body.
