4.
Place the desired cutting plate next to the sharp side of the cutting blade, fitting
the tabs into the slots.
5.
Screw the screw cap clockwise until tight. Do not over tighten.
6.
Place the hopper plate on the head and fix into position. Cut all meats into
pieces so that they fit easily into the hopper opening.
7.
Plug the cord into a 120-volt, AC electrical outlet ONLY. Set the "ON/OFF"
switch to the "ON" position.
8.
Use the food pusher to feed foods into the hopper plate opening.
9.
When all grinding has been completed, switch the appliance to "OFF" and
unplug from the electrical outlet.
10. Clean as directed in the "Cleaning Your Meat Grinder" section of this manual.
Making Sausage:
Prepare the meat by grinding it through the 3/16 inch fine cutting plate and mixing
the sausage ingredients until all the spices are evenly distributed.
1.
Place the sausage tube collar over the desired size sausage tube. Hold the
sausage tube with the collar against the cutting plate.
2.
Slide the screw cap over the sausage tube and collar and screw into place.
3.
With the motor running, use the food pusher to push the ground sausage meat
into 28-30 mm hog casings, 22-24 mm lamb casings, a cloth bag, or a 3½ inch
by 24 inch fibrous casing. If casings are not available, form the sausage by
hand into the desired shape. Note: Sausage should not be allowed to remain
at room temperature any longer than necessary. Place in a cooler as soon as
possible. Sausage should be allowed to chill and dry in a 28-32° F (-2-0° C)
cooler.
Do not grind hard items such as bones or nuts.
Do not grind ginger or other materials with a hard fiber. For recipes calling for ginger,
use ground ginger.
Do not apply excessive pressure or force while feeding food into the machine as
jamming may occur. If the circuit breaker stops the motor, or if the motor continues to
function but no meat comes out of the cutting plate, try reversing the motor. If
unsuccessful, switch the appliance to "OFF" and clean the appliance before
continuing.
Wait 5 or 6 seconds when switching between "ON," "OFF," and "REVERSE," or
damage to the gears may occur.
