Before first use, please read the operating instructions and familiarize yourself with the device.
Observe the safety instructions for the proper and safe use.
Intended Use
The FIAP profiwork Salmofix Manual, hereinafter called device has been produced exclusively for
processing of fish and at an operating voltage of 220-240 V (optionally available FIAP profiwork
Salmofix Suction Device). The device is suitable for use in compliance with the national installation
regulations.
Improper use
Improper use can lead to dangers of people handling this device. By improper use, our liability as well
as the general operating license expires.
CE Declaration
In accordance with the EC Directive EMC Directive (2004/108/EC), conform. The following harmonized
standards were applied:

Safety
For safety reasons children under 16 or people who can not recognize the potential hazards of this
appliance or are not familiar with these instructions, are not allowed to use this product!
Please keep these operating instructions in a safe place! When changing owners pass on the
instructions. All work with this appliance may only be carried out in accordance with these instructions.
By improper use or no correct installation the combination of water and electricity can lead to serious
danger to life and limb. Operate the unit only if no persons are in the water! Before reaching into the
water, always disconnect the power supply to all devices in the water. Compare the electrical data of
the power supply to the label on the packaging or on the device. Make sure that the unit is secured by
a residual current device with a rated residual current of maximum 30 mA safe. Operate the unit only
on a correctly fitted socket. Keep the power plug and all connection points dry! Lay the connection
cable protected so that damage is excluded. Only use cables, installations, adapters, extension or
connection cables with earthed that are approved for outdoor use. Do not carry or pull the unit by the
cable! With a defective cable or enclosure, the unit must not be operated! If the power cord of the
appliance is damaged, it must be replaced by the manufacturer or its service agent in order to avoid a
hazard. When the cable is damaged, the appliance should be discarded. Electrical installations must
comply with international and national installation requirements. Never open the housing of the device
or its associated parts, unless specifically noted in the instructions. Do not make any technical changes
on the device. Use only original spare parts and accessories. Only be carried out by authorized service
centers repairs. It must be ensured that all conductive parts (screws, terminals, etc.) are isolated and
can not be touched directly! For questions or problems, please contact for your own safety to a
qualified electrician.
Electrical connection
The electrical connection must be carried out according to the VDE and EVU by an authorized
specialist. All performance data can be found on the nameplate. All work on the unit are carried out in
de-energized condition!

Installation and commissioning
The FIAP profiwork Salmofix Manual is fully wired and ready for use. The FIAP profiwork Salmofix
Manual should always be installed on a solid work surface.
Operation

Open fish with the FIAP profiwork Salmofix knife. Keep the fish on the head and the tail. The anus of
the fish is hooked to the FIAP profiwork Salmofix knife. With a straight cut the fish will be opened from
the anus to the gills.
After opening the fish put it again to the mouthpiece of the FIAP profiwork Salmofix Manual (gently
open the fish) so the innards will be stripped through the mouthpiece. Repeat this process until all the
innards are removed completely.
Remove the throat of the fish by pressing the cutting mechanism of the FIAP profiwork Salmofix
Manual.
The innards are collected in a container installed below the FIAP profiwork Salmofix Manual. If you use
the FIAP profiwork Salmofix Suction Device, the innards will be collected in its container. The container
of the FIAP profiwork Salmofix Suction Device should be emptied and cleaned at least once a day.
Commissioning
1 Install the FIAP profiwork Salmofix Manual at a fixed work surface
2 Install, if desired, the optional FIAP profiwork Salmofix Suction Device.
3 Fill up the FIAP profiwork Salmofix Suction Device container with water. (Water level approximately 5
cm).
4 Moisten the FIAP profiwork Salmofix Manual head with water.
After the slaughter process, the device has to be cleaned.
Cleaning and Maintenance
Caution! Before cleaning or maintenance, always remove the power plug!
Thanks to its design the device can be easily cleaned with water.
The vacuum cleaner must be cleaned and maintained.
Regular disinfection should take place after the application with FIAP proficare B100.
Disposal
The device must be disposed of according to national regulations. Ask your dealer.
