6.1 Introduction to induction cooking
Cooking with an induction hotplate works differently to what you are used to from normal hotplates. The
heat is generated by means of an electromagnetic field in the base of the cooking vessel and not by
means of heat resistors in the heating zone. This saves energy and reduces cooking times. But you do
need special induction-compatible cookware with a ferromagnetic base.
At high power, the content of the cooking vessel is heated much quicker, it also reacts much more quickly
to the temperature being turned down. You could say that using an induction hotplate is very similar to
cooking with gas. As a general rule: The thinner the base of the pan, the quicker the system reacts to
changes to the power setting.
The best way to optimise the heat output (and therefore electricity consumption) is to use a pan which is as
wide and flat as possible. This means that a wide, flat pan is more economical and efficient than a tall pot
with a smaller diameter.
