INSTALLATION
THIS COOKING EQUIPMENT SHALL NOT BE ENCLOSED WITH ANY COMBUSTIBLE CONSTRUCTION. ONLY
NON-COMBUSTIBLE CONSTRUCTION MAY BE USED TO ENCLOSE THE UNIT.
- WARNING: do not pack required air spaces with insulation or other materials.
- When this oven is not properly installed, a fire may result. To reduce the risk of fire, follow the installation
instructions.
- Please read this entire manual before you install the oven. Failure to follow instructions may result in property
damage, bodily injury, or even death.
POSITIONING THE OVEN
- Safety must be the first priority. When the oven is in
operation ensure that no other fuel and materials that
may be damaged by heat and sparks are close to it.
- The outer walls of Quattro Pro may reach high
temperatures greater than 50°C.
- Position the oven so it is not in contact with the wall
or other furniture and make sure there is a gap of at
least 8 in alongside and behind the oven.
- The minimum hearth extension areas to be covered
with relationship to the door opening of the oven for
combustible floors are: 30 inches to each side of
the door opening and 36 inches in front of the door
opening.
- The oven must be connected to a smoke exhaust
system, the smoke discharge must be airtight.
- The accessory works must not rest on the structure
of the oven.
WOOD STORAGE:
- Never put wood logs on the shelf of the oven, put
logs on the ground underneath the oven.
ABOUT THE CHIMNEY
- The exit of smoke from the wood-fired oven has a
diameter of 180 mm.
- By law, the chimney flue must serve only one thermal
device and connecting more than one device to it
may compromise the regular dispersal of smoke.
- A well-constructed chimney flue should not contain
too many joints or curves. Hairpin turns at angles
greater than 45° are to be absolutely avoided for the
correct dispersal of smoke.
- Contact local building of fire officials concerning any
installation restrictions or need for inspection of the
oven installation.
- This cooking equipment is to be connected to a UL
Listed Factory-Built Grease Duct System/Building Heating Appliance Chimney System (For USA or CANADA).
- Have the oven connected to a UL Listed Factory Built Grease Duct System/Building Heating Appliance
Chimney System complying Chapter 14 of NFPA 96 (For USA or CANADA).
