9) INSTALLATION PROCEDURES FOR SKILLED TECH-
NICIANS
9.1) Unpacking and installation
Remove the equipment from the packaging and put it on a
surface having dimensions suitable for the shape and the
weight to be borne. While removing the packaging, take
care in order to avoid possible impacts, which could damage
the equipment. Clean the equipment and use a brush made
of natural fibre or brass to clean the inner part of the oven,
i.e. the refractory surface.
WARNING:
The packaging elements (plastic bags, cardboard, nails etc.)
shall be kept away from the reach of the children, since they
are possible danger sources.
9.2) Installation
The equipment has been developed to be utilized with no
need of particular preparations, in a working environment
suited to food preparations.
The equipment shall be installed on a perfectly horizontal
surface, also suitable to bear the weight concerned. The
equipment (oven) shall not be installed close to inflammable
walls, such as furniture, partition walls or matchboarding
coatings and so on.
A safety distance of at least 20 cms from lateral sides and
from the oven back shall be kept. Also the floor the oven is
installed on, shall not be of inflammable material.
In no cases it is allowed to put inflammable objects close to
the oven. Safety fireproof conditions shall always be assu-
red.
9.3) Law provisions, technical regulations and rules.
Concerning the installation, following specifications shall be
considered:
- accident prevention rules.
- Rules concerning Standards currently being in force.
9.4) Electric connection
Due to packaging reasons, the electric cable is rolled up
inside the electric box. Unscrew the four screws, which fix
the lateral board, remove whole electric cable, fix it using a
cable pressing device, mount the lateral board again.
The installation is only possible if between the power supply
network and the machine there is an omnipolar wall cut-out
switch according to current rules, having a minimum contact
opening of 3 mm per pole.
The installer shall prepare a connection line with a minimum
section of...... (see technical features).
Check the effectiveness of the electric protecting connection
(earthing).

9.5) Equipotential system
According to current rules, the machine shall be inserted in
a potential compensation system . The concerned connec-
tion screw is at the rear wall, it is marked by the symbol.
The effectiveness shall be checked as indicated in the
rules currently being in force.
9.6) Maintenance
Before starting any cleaning or maintenance procedure, disconnect
the oven power supply.

DAILY MAINTENANCE

9.7) Refractory surface cleaning
The refractory surface of the oven can be cleaned using a brush
made of natural fibres or brass, without utilizing detergents (water,
normal cleansing agents etc.). At the end of each working day let
the oven reach its maximum temperature keeping it for 30 minutes.
The day after brush the surface, which become cold.

ANNUAL MAINTENANCE

Carefully remove the refractory surface at least once a year and
also take care while leaning it. Then, use a vacuum cleaner to
remove possible burnt residues or dust being under the refractory
surface.
DAILY MAINTENANCE
9.8) Cleaning of the oven
The outer part of the oven shall daily be cleaned using lukewarm
soapy water, carefully rinse and dry. Do not clean using steel wool,
brushes or scrapers made of common steel, since iron particles
could settle and cause rust areas.
