The maximum capacity of prepared product is approximately 25 kg. This information should be used as a
guideline and may vary according to the composition of the product or the type of mince.
When starting the machine, the blades must always be started before the bowl by using the blade start button.
Once the blades have been started, the blade speed can be controlled using the speed selector.
To start the machine, the emergency stop button and the normal stop button must be released.
Always control the temperature of the mince using the digital thermometer.
When lifting the translucent cover, the speed of the blades immediately goes to the minimum.
To work with the mixing function, turn the selector to the left in order to invert the rotation direction of the blades or
keep the selector to the right to maintain the same direction (the cutting direction). The rotation speed selector
can be used to control the blade speed only in the mixing function.

To return to the cutting function, the machine must be stopped either by using the normal brake, by using the
inertia stop button or by using the emergency stop (stop with brake).
CLEANING
To clean the cutter, it must be unplugged from the mains. Use hot water and neutral soap for the bowl, the cover
and the blade assembly and in general for any zone that requires cleaning.
Never wash the blades using water that is above 60º C or immediately after the machine has been working
extensively, given that an abrupt contraction of the material causes the appearance of micro-cracks.
It is highly important to always keep the blade or plate fastening surfaces clean in order to prevent remaining bits
of meat and other particles from creating zones of maximum pressure that cause micro-cracks, which result in
subsequent blade breakage.
For safety reasons, it is advisable to use metal mesh gloves to clean and handle the blades.
The entire blade holder unit can be removed for easy and effective cleaning (without disassembling the blades) by
removing the hex nut (C) (left-hand thread) on the front of the blade assembly (see the description of the control
panel in assembly drawing 04).
Be careful to position the blade closest to the nut just above the top edge of the bowl to facilitate removal of the
assembly.
To turn the bowl in cleaning using selector (B) the normal stop button (P) or the emergency stop button must be
pressed.
MAINTENANCE
Due to the careful design and simplicity of the mechanisms, the cutter requires little care to remain useful for a
long period of time.
However, the details must be monitored, such as sharpening and correct gauging of the blades, as well as
lubrication of the blade shaft bearings.
1. The bearings of the blade holder arm (see orifice B in diagram 04) should be lubricated only after 500 operating
hours. It should be done using one of the following lubricants: SKF - LGMT2 grease, VELOGRAS-M from GPM,
BEACON EP-1 from ESSO, ALVANIAEP-1 from SHELL, ENERGREASE LS-1 from BP or MOBILUX-1 from
MOBIL (NLGI-2 grade consistency).
In order for this unit to work perfectly, it must not be overloaded with grease. Therefore, APPLY ONLY TWO
PUMPS USING A MANUAL GREASE PUMP AND DO NOT USE ANY OTHER KIND OF GREASE.
2. The reduction gear requires no maintenance.
General rules for correct blade maintenance:
1. Blades must be sharpened only on the cambered side using a water stone and always keeping the original
angle of 27º.
2. The weight differences between blades in the same set must not be greater than 5 grams.
