2.6 Cooldown
Cooldown selector. The oven must be at a temperature above 45ºC to use the Cooldown
function. An animation indicates that the door needs to be opened for cooling.
Do not cool the oven by adding cold water directly into the chamber. The hand shower
must not be used to cool the cooking chamber.
2.7 Time function
Time selector. The selected time is shown on the time display. When the time selector is
pressed, the time display flashes and the value can be adjusted with the knob until the
desired value is selected. To validate the time, press the knob or allow 3 seconds to
elapse.
Turn to the left to switch to continuous mode. Turn to the right for maximum temperature
(displays 48h).
2.8 Delta/probe function
Delta/probe selector. Pressing the probe selector switches from time to probe
temperature on the display.
To change from probe to delta mode or vice versa, press and hold the selector for 3
seconds. The selected mode is shown on the control display.
The oven is equipped with a core probe in the cooking chamber. However, an additional, externally
connected probe can also be used.
If an additional external probe is connected to the oven, the four selection options are shown on
the control display when the selector switch is pressed for 3 seconds and the desired selection
must be confirmed with the control knob.
Cooking in probe mode is performed at the selected temperature and humidity values and
finishes when the probe, the core of the food, reaches the selected temperature.
Cooking in Delta mode is performed according to the internal temperature of the probe and
the adjustable temperature of the chamber. The food is cooked by maintaining a constant
difference between the cooking chamber temperature and the core temperature.
To interrupt the Cooldown process, open the door or press the
Cooldown button again.
During this cycle, both the fan guard and tray guides must be
securely anchored in position.
