Carry out the appropriate cleaning operations to ensure a long service life for your
appliance.

We recommend cleaning it before turning it on the first time. Repeat frequently
to prevent infection. DO NOT use abrasive, corrosive, acidic, chlorine-based
detergents, solvents or gasoline derivatives to disinfect or clean inside the unit.
•
If salt blocks are included, unpack them by removing the film, and place them in
the steel tray at the bottom of the unit. Check them every 2-3 days to avoid fluid
build-up.
•
The meat to be matured must be fresh, no more than five days after slaughter.
•
To age meat cuts on the grills, make sure they have a good fat cover and around
the bone as much as possible.
•
Anyone touching the meat should wear protective gloves: no one should touch
meat without gloves.
•
Clean the appliance periodically and whenever there has been any spillage or
there are residues. Before performing any cleaning operation, unplug the unit
from the mains supply. These units are fitted with an emergency drain to
facilitate cleaning. Either connect it to a waste water drain through a trap or
drain it into a tank that is emptied periodically. During cleaning operations, you
must remove the plug and clean the drain to avoid clogging it with solids. It is
important not to leave any liquid residues that could stagnate.

Do not clean the appliance with pressurised water jets.
•
Condenser cleanness: When cleaning, take care not to bend the condenser's
aluminium fins. If they become bent, the air will not pass through them and
condense, seriously damaging the unit. The guarantee will then not cover the
necessary repairs.
•
Some components around the condenser unit can get very hot, so there is a
burn hazard: take the necessary precautions before accessing it.
•
Check that the doors close properly.
•
We recommend contacting technical service twice a year to carry out the
necessary checks and maintenance.
•
If you leave the appliance out of use for prolonged periods (such as holidays or
temporary shutdowns), follow these guidelines:
Unplug the unit from the mains supply.

Empty the appliance and clean it thoroughly.
o
Leave the door ajar to allow air to circulate and prevent mould growth.
