Preheating
and pan

Preheat the oven if the recipe calls fl)r it. To
p_eheat, set the o\ en at the correct temperature.
Preheating is necessary flw good results when
baking cakes, cookies, pastx y and breads.
l_)r ovens without a preheat indicator l_q'ht or tone,
/)reheat 10 mi_utes.
Baking results will be better if baking pans are
centered in the oven as much as possible. Pans
should not touch each other or the wails of the
oven. If you need to use two racks, stagger the
pans so one is not directly abo\ e the other, and
leave approximately 1½" between pans, f/"om
the fi'(mt, back and sides of the wall.

You can use alunfilmm fl)il to line the broiler
pan and broiler grid. However, you must mold
the toil tightly to the grid and cut slits in it just
like the grid.

Never entirely cover a rack with ahmfilmln fifil.
This will disturb the heat ciI'culation and result
in poor baking.
A slnaller sheet of toil inav be used to catch a
spillover by placing it on a lower rack several
inches below the fi_od.
Cut slits in the foil just like the grid.
