Fresh Lemon Blueberry Waffles
Makes 4 waffles
400ºF, 6 minutes

3/4 cup all-purpose flour
•
1/4 cup cornstarch
•
3 tablespoons granulated sugar
•
1/2 teaspoon baking powder
•
1/4 teaspoon baking soda
•
1/2 teaspoon table salt
•
2 tablespoons blueberry preserves
•
2 tablespoons lemon curd (may substitute lemon pie filling)
•
1 lemon, juiced and zested
•
1/4 cup whole milk
•
1/2 cup blueberry yogurt
•
1/4 cup vegetable/canola oil
•
1 large egg, lightly beaten
•
3/4 teaspoon lemon extract
•
lemon zest for presentation
1.
Install 2 waffle cooking plates.
2. Preheat the 8-IN-1 Grill Station to 400ºF.
3. Zest lemon and set aside.
4. Combine dry ingredients in a blender jar. Add wet ingredients to blender jar.
5. Blend until light and frothy, scraping down the sides several times.
6. Set aside and allow batter to rest for 30 minutes.

When the blue READY light illuminates, lift the lid and use a heat-proof brush to lightly coat
the upper and lower cooking plates with vegetable oil
IMPORTANT: Do not use non-stick sprays as they can cause build-up on the cooking plates.
Use vegetable or olive oil instead.
8. Use a 1/4 cup scoop to add batter onto each of 4 waffle molds on the lower cooking plate.
Use a spatula to spread the batter into the edges of the plate. DO NOT OVERFILL.
9. Lower the top cooking plate to close the Waffle Maker. Bake for 6 minutes.
10. Lift the upper waffle cooking plate gently. If it pulls or if a darker color is desired,
continue cooking for 30 seconds and test again. Use a heat-proof rubber spatula to remove
the 4 waffles.
11. Keep lid closed for future waffle baking and repeat with remaining batter.
12. Serve waffles with whipped cream and fresh blueberries. Adorn with lemon zest.
