Fig Jam
Ingredients:
1 pound fresh figs, washed, stemmed, and halved
½ cup water
2 tablespoons agave nectar or honey
Sea salt and freshly ground black pepper to taste
1 teaspoon sumac
Juice and zest of 1 lemon
1 tablespoon dark molasses
Directions:
1. In a large nonreactive saucepan, bring water, lemon juice, molasses, and
agave to a boil.
2. Add the figs and simmer over medium heat for about 10 minutes.
3. Add the salt, pepper, and sumac to fig mixture.
4. Transfer all ingredients to blender and pulse until smooth.
