ELECTRICITY-FED HEATERS' CONTROLS

On the left-hand side of the dashboard each of the two handles (figure 1) controls a group of heaters and two warning
lights that display their operation.
Here is the table that shows the power absorbed by the heater depending on the handle's position.

USE OF THE INDIRECT PAN

Before operating the pan, remove the retainer that is to be found under the
handle (K, figure 6) of the safety valve that is used in order to secure it.
Only switch on the pan's burner after perfectly filling the interspace of
the pan and the pan itself.
Fill the interspace by first opening the level tap (Q), then by opening the
interspace load tap (P) ; leave it open until the level tap (Q) will let some
water out (interspace content : 14 litre level).
Now close the loading tap (P) and the level tap (Q) ; the interspace is
completely full.
WARNING ! !
As concerns the interspace, only use water having a maximum
hardness of 10 French degrees.
Now you can fill the pan with water in order to begin cooking ; for so
doing, open one of the two cold or hot water taps (I or O; Fig. 3) until
reaching the level marked onto the pan (including the food to be cooked).
Now you can turn handles (A) that control the two heaters ; set them onto
position 3 and heat up the interspace water until reaching 100°C (reading to be made onto thermometer Z).
When the pressure corresponding to 0.5 bar is reached inside the interspace (the value can be read onto the pressure gauge N
of the safety valve, see figure 6), the valve starts giving off steam in order to reduce pressure inside the interspace; now it is
recommended to set the two handles (figure 1) in the position 1 and 2 depending on the
cooking.
- Periodically let out the air that has accumulated inside the interspace by operating
on the valve against the vacuum (F, figure 6).
- Before every cooking, check for the water level inside the interspace and top it up in
case water does not flow out of the level tap (Q).
- Never use food salt in large crystals ; it would fall on the bottom of the pans. Being
too heavy to be circulated inside the pans, it would be impossible for it to dissolve
completely. In time, the non dissolved salt may generate corrosion on the contact
spot.
We recommend to use salt in small crystals (less than 3 m) only after reaching the boiling
point.
In case this is not possible and if the salt to dissolve is in large crystals, please dissolve
it in a big separate pan.

IMPORTANT ! !

Never tamper with the pan's safety devices (valve represented in figure 6) ; have their correct operation checked for every six
months at least by skilled personnel.
