Basic recipe for fresh
pasta
Ingredients for 5 people:
• 250g of 00 flour,
• 250g re-milled durum wheat
semolina,
• 5 eggs
Place the flour on a board. Make
a well in the centre and crack the
eggs into it. Beat the eggs with
a fork and mix with the flour,
incorporating a little at a time, until
everything is combined. Work the
obtained dough with your hands to
make it elastic and homogeneous.
If the dough is too dry add water, if
it is too soft add flour. An excellent
dough should not stick to your
fingers.
