5. Probe measurement: Internal temperature
Press MODE button to enter probe measurement mode.
A probe icon shows on the left of LCD. Unfold the probe
and insert at least 7/16" (10mm) deep. You may either
press and hold the
button or press and release
(repeating the cycle) until the temperature stabilizes. The
red or green flashes accordingly to tell if the reading falls
within the safe or danger zone. It is important to clean the
probe tip before and after every measurement.
6. Data Hold
Data hold function works in both IR and Probe modes. In
the IR mode, just release
measuring and holds the last reading until next
measurement is taken, or power off. To hold the data in
probe measurement, after the
the unit continues to update for 15 seconds then it will go
into a hold mode. The "HOLD" icon shows on the top of
the LCD along with the held reading for 20 seconds and
then powers off. The hold mode is preceeded by a series
of short warning beeps.
7. HACCP Indication
Hazard Analysis and Critical Control Points (HACCP) is a
preventative approach to food safety used at all stages of
food production and preparation processes. The meter
features LED indicators to identify the critical temperature
points in both IR and Probe modes. When temperature
readings fall below 40°F (4°C) or above 140°F (60°C) a
Green LED blinks to indicate the food is in safe condition.
A Red LED blinks when temperature is between 40° and
140°F (4° and 60°C), where food-borne bacteria grows
rapidly and a potential hazard may exist.

8. Timer function
Time is a very important factor in food processing, stor-
age and safety monitoring. The meter has a timer and
alarm for control purposes, which counts up to 9:59':59".
Press MODE to enter counter setting (after probe mode),
and the LCD displays 0:00:00 (hour:minute:seconds) or
previous setting.
Press
button to start countdown with previous
setting, or press SET button to set a new one. The
second digits will blink first for value change. Press SET
again to increase the value and then MODE to select
minute and hour digits. After hour setting is completed,
press
button to count down.

continue the counter by pressing
counter mode. Or press MODE to return to IR or probe
mode and let it count down in the background.
Alarm sounds for 30 seconds when timer reaches 0, or
press any button to stop alarm.
OPERATION NOTES
1. The meter is waterproof to IP65 rating and the probe is
washable. Should steam or smoke get directly into the
infrared sensor, it will affect the accuracy.
2. The probe is not replaceable in the field.
3. When surface scan temperature falls close to the
HACCP zone boundaries, it is recommended to check
internal temperature for further verification.
MAINTENANCE
Case Cleaning:
Use a damp cloth to clean exterior housing. Make sure
no water gets inside the infrared lens.
Lens Cleaning:
Use low pressure compressed air or soft damp swab to
remove particles from the infrared lens.
Probe Cleaning:
Sterilize the probe before and after every measurement.
