DESCRIPTION MACHINE
Tamper is an innovation designed to streamline espresso production. With the movement of a mechanical lever the
tamper automatically applies an even end level pressure to the coffee in the filter-holder of an espresso coffee machine.
The result is a predictable and consistent extraction from the espresso machine. The benefits are better, quality
product, and simplified employee training and education.
GENERAL INSTRUCTIONS
Before using the appliance, carefully read the following instructions.
This unit has been designed for professional use only and hence must only be used by trained personal familiar with its operations.
The percolation time of the espresso machine has to be based on the specific tamper used.
OPERATION
Place the machine on a proper surface near the espresso grinder. Place the filter-holder with the proper amount of ground coffee
(single or double) on the fork of the unit.
Operate the lever to allow the pressing unit to gently go down on the coffee. It is mandatory to do this operation without placing
anything between the tamper and the filter holder.
Pull down the lever until you feel the release of internal components and then pull the lever back carefully.
Each dose of coffee has to be pressed one time only.
MAINTENANCE AND CLEANING
To ensure that the CPS Dynamometric Tamper functions well, it is advised that the machine is cleaned daily, in particular the
piston and tamper surface area.
The machine should be cleaned using a dry cloth avoiding the formation of coffee residues which could compromise the
machine's function and the quality of the espresso coffee.
The mechanical components are made with hardened metal to allow for repeated action.
It is necessary therefore to carry out maintenance every 500.000 actions to replace the worn components: O-ring, the spheres
and the springs.
This should be done by trained personnel, so it is recommended that you never open the piston.
The CPS dynamometric tamper is made so that you can replace the piston until with a brand new one.
REPLACE AND DISASSEMBLE THE PISTON

1) With a flat screwdriver, remove the radial ring located between the structure of the machine and the lever.
2) Using the provided hexagonal tool, remove the nut, then remove the pressing disc.
3) While applying a light sideways pressure on the lever, remove the piston, then release the lever.
4) To reassemble the piston, follow the directions in reverse. Always keep the lever vertical while replacing the piston. The repla-
cement has been done correctly when the distance between the upper part of the piston and the CPS surface is 3 ¾ inches (96
mm) – see picture 1. Dynamometric tamper optionally fit on the doser coffee grinder is 4 ¼ inches (108 mm) – see picture 1A.
