RACLETTE
Raclette is a typical Swiss dish. You can obtain a good raclette by using the original
raclette cheese. Take about 150-250 grams for each person. Cut the cheese into slices
(more or less 2 mm thick).
Prepare potatoes in their skin, which you will put into a covered bowl or on the grill, in
order to keep them warm.
Put the raclette-grill in the middle of the table.
Put the cheese into the raclette pans and place them under the heating tube. The
cheese will melt after 3 to 4 minutes.
As soon as the cheese has melted and taken a brownish-golden colour, you can serve it
as it is on your plate or spread it out on the potatoes in their skin. Add some freshly ground
black pepper.
Raclette is served with raw ham or "Bündner" meat, little onions and pickles, as well as a
dry wine.
After use, put the switch in off-position "0" and unplug the appliance.
OIL FONDUE
Always remove the bowl lid before cooking.
Fill the bowl for about a third with heat-resistant vegetable oil.
You can let the bowl with the oil heat on the raclette grill for about 30 minutes, but we
recommend preheating the oil in the bowl on a normal cooker to save time. At the same
time, preheat the appliance for about 15 minutes and put the bowl in the foreseen
opening. Caution: danger of burning! It is recommended to use oven gloves. Put the fork
holder ring on the upper edge of the bowl.
Cut the meat into small cubes or shape it into small minced meatballs, skewer them on
the fondue forks and hold them in the hot oil until they have reached the desired degree
of browning.
Do not use the fondue forks as long as the appliance is still preheating, as the forks would
heat up too much.
Take the forks only by their handle in order to avoid burns.
You can also marinate the meat before serving and cooking. You can also serve dipping
sauces to accompany your ingredients. Alternatively there is the possibility of preparing a
simple batter and rolling the pieces of meat, mushrooms or courgettes shortly in the
batter before frying them.
Fish fillets - e.g. of tuna or monkfish - are also delicious when prepared in the fondue.
After use, put the switch in off-position "0" and unplug the appliance.
CARE & CLEANING
Before cleaning, unplug and wait for the appliance to cool down.
Cleaning of the stone grill
Clean the appliance after each use in order to avoid that rests of food stick to it.
Never use scouring pads.
Never pour cold water on the hot stone, you could damage the appliance and cause
splashes of boiling water.
Clean the fondue forks, the fondue pot, the pans and the grill plate with soapy water.
Never clean the fondue pot, the grill plate and the pans with abrasive products, this could
damage the coating.
Clean the stone only with hot water and possibly with a soft sponge.
