02. INSTRUCTIONS FOR USE.
The Professional Digit 30 Neo 16.15.1 vacuum
sealer is designed for intensive use in food packa-
ging. Due to its performance features it is suitable
for demanding users who require safe, durable
packaging.

Vacuum Packaging and Food Safety
It also helps inhibit the growth of aerobic microor-
ganisms, which can lead to the problems noted
below under certain conditions:
Mould – Mould cannot grow in a low oxygen
environment; therefore vacuum packaging can
virtually eliminate it.
Yeast – Results in fermentation, which can be
identified by smell and taste. Yeast needs
water, sugar and a moderate temperature to
grow. It can also survive with or without air.
Slowing the growth of yeast requires refrigera-
tion, while freezing stops it completely.
Bacteria – Results in an unpleasant odour,
discolouration and/or soft or slimy texture.
Under the right conditions, clostridium botulinum
(the organism that causes Botulism) can grow
without air and cannot be detected by smell or
taste. Although it is extremely rare, it can be very
dangerous.

Note: vacuum packaging is not a substitute for re-
frigeration or freezing. Any perishable foods that
require refrigeration must still be refrigerated or
frozen after vacuum packaging.
Preservation Time
Foods can be preserved 2 to 4 times longer than
in normal conditions; the preservation time is
strongly linked to the conditions the product is in
when it is packed and the amount of water it
contains. Regardless of this, vacuum sealed
foods must be consumed before the date
indicated on the original packaging of the food.
To Start the Machine
• Connect the power cable to the intake socket
and plug into the power supply.
• When the LED (display) lights up the packaging
is ready to work.
To Turn Off
• When the machine is at rest, the disconnection
system is automatic, after 10 minutes without tou-
ching any button the machine will be switched off.
Important: if you package items too quickly, the
bag may be sealed prematurely, hindering
extraction of the air from the bags. Wait a few
seconds for the non-stick sealing bar of the
vacuum sealer to cool to continue with the next
item to package.
Type of Bags
The use of high-quality ELMA vacuum bags is
recommended for optimum vacuum and
preservation results.
Set the sealing time for the bag to be used (SEE
TABLE 1). If the machine is not capable of making
the vacuum at an altitude of more than 1000
metres, use the "Pulse" function (SEE TABLE 4).
