Keeping the manual

The manual must be carefully kept for the
entire life of the machine until scrapping. The
manual must stay with the machine in case of
transfer, sale, hire, granting of use or leasing.

Construction modifi cations
For being able to apply the accessories:
Hook for power cable (supplied);
Side shelf (to be ordered separately);
Single-drawer unit (to be ordered
separately);
holes have been arranged and carefully
covered with small rubber caps that are easily
removed when necessary.

This manual is intended for:
The carrier and handling personnel;
Installation and commissioning personnel;
The employer of machine users and the
workplace manager;
Operators for normal machine use;
Specialized technicians - technical assistance
(see wiring diagram and service manual).

General description

The equipment is suitable for holding cooking
appliances for the management of cooking "in
view" on the upper support surface.
It can be used near the customer, and is
equipped with:
Refrigerated drawers for keeping ready to be
cooked food;
A fume and steam fi ltering system, with
recirculation of air which, appropriately
treated, is returned into the room from the
bottom of the machine.

Description of machine modules

The machine comprises the following zones

Fume and steam extraction zone, on operator
side, immediately below the curved glass.

upper surface just below the extraction

In this zone the fumes and steam from cooking
in Zone B are extracted. The labyrinth fi lters
inside it allow fi rst fi ltration, whereas the
second fi ltration phase is ensured by the fi lters
in Zone C.
Inside it there are also the trays for collecting
the treated fats from the labyrinth fi lters.

This zone is used for placing the cooking
appliances and also has the power sockets for
connecting them.
There also the trays for holding condiments;
whose enclosures can be removed to access
the power sockets.

A second fi ltering of the cooking fumes and
steam occurs in this zone, not visible to the
naked eye.
The fumes pass through the fi lters fi tted behind
the panels on the customer side.

In this zone consisting of an open compartment
it is possible to store material useful to the
operator or install additional drawer units
(available on order).
Next to the open areas are the refrigerated
drawers for keeping food.
The machine control panel is in the front zone
just below the compartment.

In this zone, located under the appliance, the
treated air is expelled through a safety grill and
there are wheels for shifting the appliance; the
wheels on the operator side can be blocked,
since they have a brake.
