Advice on stackers with cooling slots
These models are provided for dispensing cooled plates and lids e.g. in Cook
& Chill kitchens. For this purpose the appliances loaded with plates must re-
main for several hours in cold stores. The duration of cooling depends upon
the initial temperature of the plates, the temperature of the cold store and the
desired crockery temperature. The stackers must always be free-standing in
the room so that optimum air circulation is ensured by free convection in and
around the appliances.
Use of the cover
The cover ensures effective protection against dust and condensed water
even during relatively long periods of temporary storage.
In heated appliances, using the cover reduces the heat loss upwards and re-
duces the heating time of the inserted crockery or delays the cooling of crock-
ery which has already been warmed.
Even a gap between the cover and the top plate of the appliance can lead to
marked energy losses caused by heat loss, a reduction in the maximum crock-
ery temperature and thus to a longer heating time.
