10 | Operation
– Do not allow goods to protrude over the edge of
the mesh basket.
a) Open the door at an opening angle of 90°.
b) To load, only ever open one door. Never open
more than one door at the same time.
c) When loading, never keep the door open for
longer than 10 minutes.
It is recommended that you load the appliance out-
side of business hours to prevent restricted visibil-
ity of the contents due to the build-up of mist.
d) Check the temperature on the interior thermo-
meter [see } Chapter 5.1].
e) Remove any water that may have collected on sur-
faces (seals and frame) before closing the door.
10.2

Shutdown and restart

WARNING
Work on the electrical system.
Contact with live parts may result in electric
shock.
§ Only qualified staff may carry out work on
the electrical system.
§ Observe the electrical safety rules prior to
commencing work.
1. Disconnect the appliance.
2. Secure the appliance against reconnec-
tion.
10.2.1 Shutdown
Reasons for shutdown by qualified staff
– Maintenance, service, repair [see } Chapter 12]
– Main cleaning [see } Chapter 11.1.2]
– Disposal [see } Chapter 13]
Reasons for shutdown by operating personnel
– Damage to appliance
– e.g. broken door
Only trained operating personnel or qualified staff
may shut down the appliance.
For qualified staff, the implementation is described in
detail in the corresponding service instructions.
WARNING
Shutdown of the appliance.
Contact with live parts may result in electric
shock.
§ Only trained operating personnel may dis-
connect the appliance.
§ Disconnect the appliance and secure
against reconnection.
Steps for shutdown by operating personnel
a) Move the goods to another appliance with the
same product temperature class.
b) Switch off the cooling function [see } Chapter 5]

Disconnect the appliance
NOTICE
Damage to property by unplugging the mains
plug.
Fault in the bus system
§ Remove the appliance from the bus system before
unplugging the mains plug. Contact the mainten-
ance service [see } Chapter 12.4].
c) Switch off circuit breakers used with the appliance
and secure them against reconnection
[see } Chapter 8.2].
d) Switch off circuit breakers used with the light con-
nections and
secure them against reconnection
[see } Chapter 8.2].
e) Switch off the appliance circuit by removing the
mains plug
and secure against reconnection
[see } Chapter 8.1].
f) Switch off the lighting circuit by unplugging the
connected mains plug and
secure against reconnection [see } Chapter 8.1].
Longer shutdown
a) Carry out the steps for shutdown
b) Bring the appliance to room temperature.
c) Perform basic cleaning [see } Chapter 11.1.1].
d) Leave the doors open.
NOTICE
Material damage during prolonged shutdown.
§ Do not expose the appliance to heat radiation.
§ Do not place anything in or on the appliance.
§ Store the appliance in a stable operating position
(horizontal alignment).
10.2.2 Restart
Restarting is the same as regular start-up
[see } Chapter 9].

Malfunction during operation

NOTICE
Material and property damage in the event of
an alarm display.
§ Move the goods to another appliance with the
same product temperature class.
§ Contact the maintenance service immediately
[see } Chapter 12.4].

functions during operation.
