MACHINE
The Marga Mulino is an exceptional tool
COMPONENTS (Fig. 1)
for preparing cereal fl akes and grinding
fl our in mere minutes. It grinds and fl akes
1- Machine body
soft-wheat grains such as oat, barley, and
2- Hopper
rye, as well as hard and durum-wheat
3- Regulator
grains such as summer and winter wheats,
spelt, kamut, rice, and buckwheat.
4- Clamp
5- Motor and crank
The Marga Mulino uses three rollers that
connection
rotate at different speeds. The rollers are
6- Crank
powered either by the handle provided, or
by the "Pastadrive Motor" accessory, part
7- Chute
of the Marcato Design line.
The type of processing is determined
by the distance between the rollers,
which you can change using the adjustment
knob (Fig. 2): use setting 0 (shown in red) for
fi nely ground fl our; use settings 1 to 3
for cereal fl akes with different fl ake cuts,
depending on individual preference or
ENGLISH
recipe requirement.
TIP:
Do a trial run with a small amount of
grain fi rst to determine which setting is
best suited to your needs.

FLOUR
When grinding fl our, we recommend
pre-processing by passing the grains
through the machine at setting 1,
then at 2, and again at 3.
Once pre-processing is complete,
turn the knob to 0 for fi nal processing.
At setting 0, the fi rst pair of rollers
breaks up the grains while the second
roller creates a coarse, ground fl our;
the third and last roller produces a
fi nely ground fl our (Fig. 3).
For the fi nest of grinds, we
recommend repeated milling of
the fl our on setting 0 until the
desired grind is achieved.
