FULLMATIC OPTION: Operating procedure (fig.10)
A. Twist the mushroom (emergency stop) button (fig.3, n°14) ¼ turn to the right if it has not been
released.
B. Press the green button if it flashes to initialise the machine.
C. Open the pressure plate (fig.1, n°1).
D. Choose the position of the head (half tank or full tank) using the selector on the front.
E. If necessary, lightly flour the tops of the heads (fig.1, n°4) in the tank (fig.1, n°3).
EASYFLOUR OPTION: Lightly flour the top of the head in the tank using Easyflour.
F. Empty the dough into the tank and spread it around roughly by hand.
EASYFLOUR OPTION: Lightly flour the top of the dough using Easyflour.
G. You can adjust the tamping pressure using the pressure setting handle located on the front
and the tamping time using the button on the front.
With the 10/20 option, you can choose between cutting into 10 or 20 divisions using the
selector on the front.
H. Close the lid to raise the head and divide the dough.
I. When the indicator lights up again, open the lid and collect the dough pieces.
The emergency stop button can be used to stop a cycle in progress (fig.3, n°14).
EASYFLOUR OPTION: Easyflour flour dispenser filling procedure (fig.7)
A. Open the flour dispenser lid.
B. Empty the flour in the flour dispenser filling area (fig.7, n°25).
C. Close the flour dispenser lid.
D. Set the flour dispenser flow rate using a cursor (fig.7, n°26).

MAINTENANCE

8.1

Daily, by a trained operator.

Place the head and the knives in the lowered position and clean the tank.
Clean the lid.
Press the knife raise button while pulling the lever in order to raise the knives.
Clean the knives.
Pull the lever to raise the head and clean out dough and flour residues with a vacuum cleaner.
FULLMATIC OPTION:
Place the head and the knives in the lowered position and clean the tank.
Clean the lid.
Press the knife raise button to raise the knives.
Clean the knives.
Press the green button to raise the head and clean out dough and flour residues with a vacuum
cleaner.
8.2

Weekly, by a trained operator.

Wash the entire body with a damp cloth.
Empty the flour recovery tray (DIV-R only) (fig.5, n°18).
With the head in the lowered position, press the knife raise button while pulling the lever in order to
raise the knives.
Operate the emergency stop and remove the side doors using a screwdriver.
Using a vacuum cleaner, clean all over the inside of the machine as well as the mechanical
components.
Refit the side doors.
