Recipes
In general:
The following recipes have been carefully
worked out. Without using chemical additives
or refined sugar, you can make ice cream to
strike everyone's fancy. The ice cream recipes
contain a certain amount of milk (you can use
soymilk instead) or a milk substitute like soy-
milk powder. You can use every kind of soy-
milk powder or another milk powder or half
milk / half water. Using lecithin granules is
optional; using them makes the ice cream cre-
amier. Instead of white or brown refined sugar,
we recommend using organically grown non-
refined Demerara (whole cane) sugar*.
By placing the nylon parts, the cutter, and the
bowl into which you will put the ice cream
into the refrigerator (not the freezer!) for thirty
minutes before homogenising, your ice cream
will be creamier and thicker.
The ice cream can be stored in freezer bags in
the freezer to enjoy another time. This is a deli-
cious way of using up a surplus of fruit!
*also referred to as dried sugar cane juice. It still contains
almost all vitamins, minerals, and natural flavours.
Banana Ice Cream
• 4 overripe bananas
• 2 tablespoons lecithin granules (if
desired)
• 1 1⁄2 cups milk
• 1⁄4 cup Demerara sugar or honey
• 1 teaspoon vanilla powder
Homogenise the bananas and mix them with
the other ingredients. You will get 3 or 4 cups
of liquid, depending on the size of the bananas.
To get about one litre, you can add some
milk. Freeze banana cream in a freezer bowl
until solid. Cut into slices and homogenise.

Melon Milkshake
Juice the frozen edible parts of a melon. Add
some vanilla ice cream to get about a 1⁄4 litre
shake. Stir or shake in a shaker.
Banana Dessert
Cut 4 ripe bananas in half so they fit into the
Champion. Freeze. Homogenise in the Cham-
pion. Serve. Makes 4 servings. Vary this recipe
by adding small amounts of honey, vanilla
powder, cream, or milk.
Melon Ice Cream
• 2 cups melon juice
• 1 1⁄2 cups milk
• 2 teaspoons lecithin granules (if
desired)
• 1 1⁄2 cups acacia honey or Demerara
sugar
Use a mixer to combine all ingredients well in
a bowl. Freeze in a freezer bowl. Cut into slices.
Homogenise in the Champion. Serve immedia-
tely. Makes 1 litre.

• 1 1⁄2 cups melon juice
• 1⁄2 cup milk
• 2 overripe bananas
• 1 tablespoon lecithin granules (if
desired)
• 1/3 cup Demerara sugar or honey
• 1 teaspoon vanilla powder
Prepare like melon ice cream.
