If you push the "FANS STOP" key, you turn off
the motors, the heating elements, the water
electric valve and the Venturi system.
When this function is working, the respective
red led is lit up.
This function can be used to let the food rise
inside the cooking chamber or to delay the
beginning of the cooking.
By cyclic phases the fans do a reversing gear:
the fans turn in a sense for 1' 43", they stop for
17" and then they start again to turn in the other
opposite sense for 1' 43".

Cooking chamber temperature control
You can set any temperature between 0 and
260°C.
Turn the knob to set the cooking temperature.
Position SET shows the desired set temperatu-
re. The position with the symbol "eye" allows
you to check the temperature you have in rea-
lity in the cooking chamber at the moment you
control the datum.
While the oven is working, the display conti-
nuously switches from the set to the real tem-
perature every 4 seconds.

Food core temperature control
You can set any core temperature between
0°C and 100°C.
Turn the knob clockwise to set the temperature
of the core temperature control probe.
Position SET shows the desired set temperatu-
re. The position with the symbol "eye" allows
you to check the temperature your have in
reality at the core of the food you are cooking.
While the oven is working, the display conti-
nuously switches from the set to the real tem-
perature every 4 seconds.
When the core temperature reaches the set
one (SET, programmed temperature),
the next cooking phase. When you set the core
temperature, it is not possible to set the time:
you will see "PRB" on the display of the time.
You can read the core temperature even
though you did not set the core temperature

control; in this case the set core temperature
is 0ºC.
Coocking with the function DELTA T (∆T)
DELTA T is a particular type of cooking where
the difference between the core temperature
(measured with the core temperature con-
trol) and the cooking chamber temperature
remains always the same. In other words, the
temperature inside the baking chamber is the
result of the additino of a fixed DELTA T (chosen
and set by the user) to the core temperature of
the food.
In case you use DELTA T, the division of the
time into 4 basic periods is deactivated; the
total cooking time is unknown as the cooking
stops when the core temperature of the food
reaches the set one.
System to set the temperature
a) Cooking chamber temperature only.
b) Cooking chamber temperature + core tem-
c) Core temperature control + Delta T.
NOTE:
When you use solution "b", DELTA T cannot be
used;
When you use solution "c", you cannot set the
cooking chamber temperature
To set the different temperatures required by
you go to
the chosen solution push the key you find on
the left side of the temperature regulation
knob.
